Hang Sun Lee 李杏新

June 18, 1927 -  December 21, 2023

Hang Sun Lee was born in China on June 18, 1927. She lived a long and happy life until the age of 96, passing peacefully in her sleep at home.

She was married to Kwok Kuen Lee (d. 1988) at seventeen, giving her adult responsibilities at a very young age.

She was a dedicated and tireless mother to seven children. Predeceased by her daughter Christine (Norman). Survived by her other children Ann Marie (Ed), Rose (Wayne), Rita, Robert (Teresa), Luisa, and Bill (Rose).

A fruitful life has provided her a loving family, that includes grandchildren Raymond, Silvia, Jackie (Don), Jeff (Jen), Jenn (Byron). Predeceased by Kim and Derek. Great grandchildren include Oliver, Scarlett, Remi, and Bodhi.

Her extended family includes many nieces and nephews.

A courageous woman whose life led her to move from China to Hong Kong, and then to Mexico. In the mid-sixties, she made her way up north to Levack, Ontario, before settling in Toronto, her final home and resting place. She did this with numerous children in tow, travelling to foreign countries not knowing the languages.

As a young girl, she was an excellent student, one of the few females who was allowed to attend school. During that time, she enjoyed singing on stage with fellow classmates.

She focused on raising her children. After working in a restaurant all day, she would come home to prepare a home cooked meal. The specialty being her traditional soups we had everyday. She also made wontons, egg rolls, dumplings, and other foods from scratch.

Her style was elegant whenever there was a birthday, wedding or family dinner. Always modest and graceful.
She was an avid gardener of flowers and vegetables for the family table. Always providing.

Upon her retirement, she enjoyed meeting up with the ladies to play tiles. She would make her special yellow sponge cake among other desserts.

She also enjoyed following the Toronto Blue Jays and watching curling but thought hockey was too violent of a sport.

She had great admiration for Queen Elizabeth. Often waking up bright and early to watch live telecasts of Royal weddings and celebrations.

Her entire family is enriched by her love and dedication.
She will be greatly missed by all those she has left behind.

I pray that Gods mercy and light direct hang sun Lee on journey home to him ! May her beautiful soul rest in the perfect peace and love of Christ. May God in his infinite mercy protect and cover her children, grand children and great grandchildren! May he never leave their side and always be there for them . May our mother of perpetual help be their guide and light. Amen ! My sincere condolences to the Lee family ❤️

Our condolences to Ann Marie, Rose, Rita and the rest of the families.
We had met your lovely mother at our younger days. During the times we met, she was very kind, sweet with a big heart. She encouraged us to eat lots and come often to her house. Having spoken to her a few times, in our village dialect, we knew she was a traditional woman in a very good way, a dedicated, hard working mother of a large family. She was well rewarded with a healthy and longevity life. Mrs. Lee, may you rest in peace.

One of our fondest memories of my mom was when she came to stay for the weekend at our new home. Rose, my wife, and I were still getting settled.

She brought with her three different types of flour to teach us how to make steamed dumplings, bao, cheung fun and other tasty delights…all from scratch!!!

Her grocery bag also included all the filling ingredients.
Pork meat, dried mushrooms, dried shrimp, green onions, water chestnuts, soy and oyster sauces, etc.
Whatever was needed, she brought…she was fully prepared.
She even brought her own bamboo steamer!!

Mom proceeded to prepare the dough and fillings, never using scales, measuring cups or measuring spoons…no recipes!!!
Everything was done with the touch, the feel and the eye of an expert.

The results had all of mom's morsels at near perfection.
All the crimps and folds of the dumplings were identical, the wrap thickness was crystal-like.
The bao bread was light and fluffy.
And of course, everything tasted fantastic!!!

Our results…were edible!!!

There is no one like mom’s cooking!!!

We had a wonderful experience and will always have a wonderful memory.
