Uncle Mac! He and my father Dr Joe Ramsaran were very close. I'll always remember Uncle Mac would have huge coolers filled with freshly caught fish and would always be sending me walking home with this huge fresh fish to drop to my Dad and people would be asking me on the main road, "Aye fish man! How much ah pound yuh selling dat for fish for?" :(
I would always remember Mac's Souse! Anytime the Pasea Boys had a cook up lime at Ryan's house, we would always beg Ryan to ask his dad to prepare a Mac's Chicken foot Souse for the boys! It was beyond perfection! Then there is
Mac's Pepper Shrimp! He taught Ryan the secret and Ryan eventually taught me but we could never beat the original pepper shrimp hand of Uncle Mac!
During Uncle Mac's retirement, I remember he would have small limes home by him with his boys, Ramsingh,Harditsingh and a couple others I can't remember, and I would always ask Ryan if I could come over because I knew for a fact that Uncle Mac had to be cooking something special
I remember Uncle Mac carrying Ryan and I to the Airport during a school night to play Arcade games! That was the best! Before the Red Charmant car he used to carry us to the airport with, as well as Caura River limes, he had his huge left hand drive blue car. Now even if somebody in Trinidad didn't know Uncle Mac. they would have at least known him as, "the man with the big big big blue car!" De car couldn't even fit on one of the road lanes! It was the width and length of a 3-Tonne Truck! I can't remember the Name/Brand of the car but I am sure he was the only one in the country with it! When I used to be sitting in the back of that car, I used to feel like royalty!
I have many fond memories of Uncle Mac and I will always think about him. I will miss him!
